I think these slides can help you understanding Buildroot in general:

and I suggest you to try to build one of the board under 
buildroot/configs/ folder. That way you should be able to see the
various steps covered, including Linux building. By reading the log
you should be able to understand how Buildroot downloads, extract,
patch, configure, build and install Linux as well as any other package.

If you take a quick look at any _defconfig file you should see how Linux
version and possible URL are used, as any kind of option.
